Italian Chicken

Recipe

Ingredients

  • Chicken breasts/strips (un-breaded) as many as your family would eat
  • 16oz bottle of Zesty Italian Dressing
  • 1 small back of baby carrots
  • Egg Noodles
  • 1-2 cups shredded cheese (Mozzarella or provolone are our favorites)

Directions

Put chicken, dressing and carrots into a slow cooker for 6 hours on low. Check to make sure chicken is cooked .

Make egg noodles based on manufacturer instructions.

When noodles are done, mix with chicken and carrots. Add to a casserole dish and sprinkle cheese on top.

Grandma's Coffee

Ingredients

  • 1 package Yeast
  • 1/3 cup sugar
  • 1 teaspoon salt
  • ¼ cup lukewarm water
  • ¼ cup butter
  • 1 egg
  • 3 ½ to 4 cups flour
    1 cup lukewarm milk
  • Additional melted butter
  • Mixture of Cinnamon and Sugar

Directions

In a bowl, combine yeast, 1/3 cup of sugar and salt into lukewarm water. Add beaten egg and stir. On the stovetop in a small pan warm the milk with ¼ cup of butter. Alternating, add warm milk mixture with flour to the yeast mixture. Put dough into a large greased bowl, cover, and let rise until it has doubled in size. Flour a work surface and knead dough until it becomes elastic. Divide dough in half. Using your hands, spread each half into a 8 inch round cake pan. Spread a small amount of melted butter on top of the dough. Sprinkle generously with a mixture of cinnamon and sugar. Cover and let rise until doubled. Bake at 375 degrees for about 30 minutes or until coffee cake is light brown. Yield 20 servings – 2 coffee cakes.

Fruit Cobbler

Ingredients

For the crust:

  • 2 cups flour
  • 1 cup sugar
  • 1 cup milk
  • 4 TBS melted butter
  • 4 tsp baking powder

Fruit:

  • Any thing-Peaches, Blueberries, pears, cherries, raspberry, fresh or frozen or canned
  • 2 cups fruit
  • 2 cups water

Directions

Combine all the crust ingredients (should be a thick batter) and spread into the bottom of a 9x13 cake pan.

Combine fruit, sugar and water in a pan on the stove, bring to a boil

Pour hot fruit and liquid on top of batter.

Carefully put into the oven.

Bake for 25 minutes at 425

TIP-place a sheet pan under the cake pan to catch any drips

Serve with whipped cream, cool whip, or ice cream.

Sriracha Turkey Meatballs

Take one week at a time. If that is overwhelming, then take one day at a time. If that is overwhelming, then take one hour at a time. There is NO shame in struggling with this current situation, and cut yourself slack if you feel overwhelmed!

Recipe

Ingredients

  • 19oz package ground turkey
  • 1 large egg
  • 1/2 cup plain breadcrumbs
  • 2 inches fresh ginger
  • 1/2 tsp soy sauce
  • 1 bunch of green onions, divided
  • Freshly cracked pepper

Glaze:

  • 2 Tbsp. soy sauce
  • 1Tbsp rice vinegar
  • 1/4 cup brown sugar
  • 2 Tbsp. sriracha hot sauce

Directions

Preheat the oven to 350 degrees. Add the ground turkey, egg, bread crumbs, soy sauce, and some freshly ground pepper to a large bowl. Peel the ginger with a vegetable peeler or by scraping the skin off with the side of a spoon. Use a small holed cheese grater to grate about two inches of the ginger straight into the bowl. Thinly slice 2-3 of the green onions and add to the bowl (save the rest for later)

Mix the ingredients in the bowl thoroughly. Shape the meat mixture into meatballs about the size of Ping-Pong balls. You should get 25-30 meatballs, depending on the size. Arrange the meatballs on a baking sheet covered in foil and bake in the preheated oven for 25 minutes.

While the meatballs are baking, make the sriracha glaze. In a small pot combine the soy sauce, rice vinegar, brown sugar, sriracha and 1/4 cup of the water. Heat and stir the mixture over medium heat until the brown sugar is dissolved. In a small bowl, stir together the remaining 1/4 cup of water with the cornstarch. Pour the cornstarch slurry into the pot with the glaze. Stir to combine. Allow the mixture to come up to a simmer, at which point the glaze will thicken and become glossy.

After the meatballs are finished baking, transfer them to a large bowl and pour the glaze over top. Carefully toss the meatballs to coat in the glaze. Serve hot topped with the remaining sliced green onions.

Parmesan White Bean Dip

Ingredients

  • 1 can cannellini beans (or other white beans)
  • 2 tsp minced garlic
  • Zest or juice of one lemon
  • 2 Tbsp. olive oil
  • 1/4 cup parmesan cheese
  • 1 Tbsp. chopped parsley

Directions

Place all ingredients in a food processor or blender. Blend until very smooth draping down the sides. Serve with crackers, chips and/or veggies. Makes about 1 1/2 cups.

Egg in the Hole Sandwich

Ingredients

  • 2 large slices crusty bread
  • 2 tsp butter
  • 1/2 avocado, sliced
  • 2 slices cheddar cheese
  • 1 tomato, sliced
  • 1 egg
  • Black pepper

Directions

Use a circular cookie cutter to cut a hole in one of the slices of bread. If you don’t have a cookie cutter, just cut around the top of a drinking glass instead.

Butter both sides of the two slices of bread and place in frying pan. Cook over a medium heat for a few minutes until the underside is golden brown, turn the slices over.

Turn the head down fairly low. Top the whole slice of bread with sliced avocado, cheese and tomato and crack the egg into the hole in the other slice of bread.

Cover the pan with a lid, and cook for a few more minutes, until the cheese ahs melted and the egg is cooked to your liking. Sandwich together the two pieces of bread, top with a good pinch of black pepper and serve.

Bit-o-Wyo Beans

Stay connected with family and friends, perhaps setting up specific "meeting" times with those with whom you are closest. Try to follow a schedule for your more essential activities in order to provide some structure to your day.

Ingredients

  • 1/2 Lb. bacon cup up
  • 1/2 lb. ground beef
  • 1 cup onion
  • 1/2 cup ketchup
  • 3/4 cup brown sugar
  • 1 tsp mustard
  • 2 tsp vinegar
  • 1 can each (with liquid)
    • Pork and Beans
    • Kidney Beans
    • Garbanzo Beans
    • Baby Lima Beans
    • 1 can black beans (drained)

Directions

Brown bacon and beef, add onion, brown slightly, stir in remaining ingredients. Pour into casserole. Bake 40 minutes at 350.

We have made these in a crock pot.

John’s modifications: I prepare it on the stovetop, use much less bacon and brown sugar, and neither garbanzo nor lima beans; add garlic. Cook bacon separately, then sauté onions in the grease with rosemary. (MY usual SOP is to sauté onions in olive oil since a chef friend told me onions should always be sautéed when a recipe calls for the onions to be added to a liquid; he also converted me to a rosemary fanatic.)

Unstuffed Peppers

As for advice, I feel like trying to maintain some sense of routine is really helpful - sleep "normal" hours, eat "normal" meals, go outside every day when the weather cooperates, talk to loved ones (friends, family, coworkers, etc.), move your body every day (even a short walk around the block can change the mood). It's easy to get energy zapped by being on a computer for long stretches of time, so try to take a short break each hour where you aren't looking at a screen.

  • 1 Lb. ground beef/turkey/chicken/ sausage or vegetarian substitute
  • 1 package frozen peppers and onion blend
  • 1 package frozen cauliflower rice or 2 cups cauliflower rice (you can also
    use cooked rice)
  • Half a jar of marinara sauce (or 1 can of tomato sauce & Italian Seasoning)
  • Optional: Shredded Cheese

Directions

In a large skillet, brown the meat (and if using raw onions/peppers, add in at this step). Once meat is cooked, then add peppers & onions and cook until heated through. Add cauliflower rice and cook until heated and starting to soften. Finally add tomato sauce or marinara sauce. Cover & simmer for about 10 minutes, or until fully heated and combined and sauce is simmering. Top with shredded cheese, if desired.

Jambalaya

Ingredients

  • 1 or 2 bell peppers red/green
  • 2 hot Italian sausage links
  • 1 onion chopped
  • 1 bag of shrimp and/or 1 chicken breast
  • 2 Tbsp. chicken bouillon
  • 1/2 tsp chili powder
  • 1/4 tsp red cayenne pepper
  • 1/4 tsp thyme
  • 1 1/2 cups instant rice
  • 1 can stewed tomatoes

Directions

Skin and slice sausage. Brown sausage in skillet. Drain off grease with a paper towel. If using chicken, cook in a skillet while browning sausage. Chop onion and pepper into bite size pieces. Combine all ingredients into a LARGE skillet or stir fry pan. Bring to a boil Reduce heat and simmer for at least 15 minutes, stirring occasionally.

Manicotti

  • Manicotti Shells
  • String Cheese
  • Marinara Sauce
  • Shredded mozzarella

Directions

Boil manicotti shells, drain In a baking dish, put mozzarella string cheese inside each manicotti Pour tomato sauce over and bake @350 for 20 minutes Add mozzarella cheese on top and bake 5 minutes longer *for added flavor, you can add a can of clams prior to baking to make clam manicotti.

Skyline Chili Dip

Take your time and be gracious with yourself. Don't be too hard on yourself. These are unprecedented times and you are doing the best you can with what you have. We all are. It is okay that everything isn't going exactly how you planned. "Good enough" is good enough.

Recipe

Ingredients

  • 12 oz. Cream Cheese
  • 15oz Skyline Chili
  • Chips

Directions

Preheat oven to 375
Spread 12 oz. of cream cheese into a 9x13 pan
Microwave chili on high for 2 minutes (in a microwave safe dish)
Pour chili evenly over the cream cheese
Place in preheated oven for 10 minutes
Remove from oven and top with 12 oz. of Skyline Shredded Cheddar
